He worked as a wrangler on a ranch in Tucson, Arizona, following his retirement from the Navy, where he was hired to fill in for John Wayne in the 1966 movie El Dorado. Later, Wilbur relocated to California and worked as an extra and stunt double there.

After starting his career in the 1960s as a stand-in for John Wayne, George P. Wilbur gathered over 100 television and film credits across six decades.

Wilbur has appeared as an actor in many movies, such as Pennies from Heaven, Every Which Way But Loose, Firestarter (1984), The Running Man, Ghostbusters II, and Cast a Deadly Spell.
